Rootz Nutrition Gives You the Perfect Excuse to Eat Cake for Breakfast

Happy Friday, everyone! I hope your weeks are rounding off well.

I was feeling a little bit extra at breakfast this morning (granted, when am I not feeling extra), and decided to try my hand at throwing together a chocolate protein mug cake. OK, so it ended up being more of a chocolate protein Tupperware cake. Is it my fault my parents are severely lacking appropriately-shaped mugs in their kitchen?

I recently came across this company called Rootz Nutrition, which makes high-quality and delicious superfood health supplements. They currently have two products available- a protein mix in chocolate banana nut flavor, and an energizing mix in raspberry lemonade flavor. Among other reasons why these products are fab, both mixes are paleo-approved, keto-friendly, gluten free, dairy free, soy free and no sugar added. Oh yeah, and did I mention they're delicious?

I kept my cake pretty simple, with the base being mashed banana and the Superfood mix. I decided to go for a chocolate-heavy version, and top it with PB2, which I'm pretty sure I'm beginning to put on everything. But, this is a pretty versatile recipe. Feel free to experiment with your own mix-ins!


Ingredients:
- One packet (28g) of Rootz Nutrition Protein-Superfood in chocolate banana nut
-1.5 Tbsp milk/ nut milk of choice (I love Almond Breeze almond milk in Unsweetened Vanilla)
-1 tsp baking powder
-1 ripe banana
-1+ Tbsp cocoa powder

For topping (I used):
-PB2 or other powdered peanut butter in flavor of choice, mixed to soft, spreadable consistency
-Cinnamon
-Crushed walnuts
Consistency of cake post-microwave

Directions:
1. In a microwave-safe mug or dish, mash banana with forks until most or all chunks are gone.
2. Mix in Protein powder until well combined, making sure to scrape edges to get residue. I found a spoon to be the best tool for this.
3. Add in baking powder, nut milk and cocoa powder. Mix until combined. You can adjust the cocoa powder if you find it too bitter, or not chocolate-heavy enough, depending on preference.
4. Place in microwave for about 1 minute 30 seconds. I checked it a few times to make sure the cake hadn't risen over the edges of the Tupperware. You may have to adjust cooking time, depending on your microwave, as the center may take a few seconds longer to cook. If in need of adjustment, go at

10-15 second intervals.
5. Taking the cake out, let it cool and set for a few minutes before plating.
6. Top with PB2, nut butter, nuts, fruit, cinnamon- anything you'd like!
